Crieff Hydro, Scotland’s oldest registered trading company, has unveiled a transformative £5M dining refurbishment, launching six new bar and restaurant venues.
As a key partner, nbm provided expert cost planning and financial management, ensuring a smooth transition that helped minimise disruption to guests.
Chief executive Stephen Leckie said that “For us, investment is always about creating something better for our guests. This is no exception, but the scale of the transformation, I believe, will really put us on the map for food and drink in Scotland. We’re confident that the variety and style of the new venues will broaden our appeal and create even more memorable experiences for guests staying or dining with us.”
Guided by the sixth generation of the Leckie family, including Richard and Charlie Leckie, with support from Fiona Leckie (Head of Interiors), the project positions Crieff Hydro as a premier dining destination in Scotland. The new venues champion local Scottish produce with global influences, offering diverse, high-quality dining experiences.

EAST: The hotel’s signature Asian-inspired restaurant.
The Ballroom Bar: An elegant, contemporary space for cocktails, mocktails, and champagne.
The Brasserie: A warm bistro serving rustic classics like the Hydro Burger and Steak Frites Au Poivre.
The Winter Garden: A reimagined Victorian glass-house for all-day dining, offering tacos, burgers, and fish and chips.
Loggia: A scenic brunch and afternoon tea venue with panoramic Strathearn Valley views, featuring Haggis Benedict and traditional afternoon tea.
The Hermitage: A speakeasy-style bar with unique cocktails, non-alcoholic creations, and rare whiskies
nbm’s strategic oversight, in collaboration with 3 Design, Denholm Partnership Architects and principal contractor Thomas Johnstone, ensured the project met its ambitious vision. The modern interiors, blending Crieff Hydro’s 157-year heritage with contemporary design, create intimate, characterful spaces that appeal to both loyal family guests and younger audiences.
